There is more evidence from the heartland that American mathematical skills are lacking. The Salt Lake Tribune reported last month that a Salt Lake County health inspector had told a restaurant that, as FDA research indicated one in four eggs were infected with salmonella, they should never use more than three when making a quiche. When the restaurant manager asked if they should just throw away every fourth egg, the inspector said she would research the issue. Further comment is impossible.
